Gluten-free Brownies

These light & fluffy brownies are delicious and healthy alternatives to regular brownies. We've combined gluten-free & vegan baking methods by using gf flour & chia eggs, which means that the brownies are less likely to bloat and offer additional nutrition!

Recipe

Serves 12 brownies


Ingredients

  • 100g dark cooking chocolate

  • 100g butter

  • 150g sugar

  • 100g GF Dove’s Farm Plain Flour

  • 1 tsp Baking Powder

  • 3 chia eggs (3 Tbsps of chia seeds & 8 tbsps of water)

  • butter, for tray

  • 100g nuts (walnuts, pecans, hazelnuts or mixed nuts)

  • 1 teaspoon Vanilla Extract

Method

  1. Pre-heat the oven to 180C or 160 Fan.

  2. Grease a square or rectangular cake tin with butter.

  3. In a saucepan, gently melt together the chocolate and butter on a low heat and set aside to cool.

  4. Blend the chia seeds & water in a small food processor or Nutribullet until the seeds have broken down & the mixture coagulates. Set the mixture aside.

  5. In a bowl mix in the sugar, flour and baking powder.

  6. Add the chia eggs, melted butter & chocolate mixture, vanilla extract and stir well until combined. If the mixture is a bit thick to fully combine, add a splash or milk.

  7. Chop 100g of nuts into smaller chunks by hand or using a small food processor. Stir into the mixture.

  8. Spread into your prepared dish and put in the oven to bake for 20 minutes.

  9. Let the brownie cool, take it out of the mould and cut into squares to serve!

Store in an airtight container such as a tupperware for up to 4 days in the cupboard. If they even last that long!
