Chorizo & halloumi flatbread

This is a firm favourite for lunchtimes. I love the flatbreads you can get in the supermarket. I usually go for thin folded flatbreads, or the chewier greek deli flatbreads.

Ingredients

  • 1 block of halloumi

  • whole chorizo sausage

  • honey

  • salt & pepper

  • lemon thyme / herb to dress

  • flatbread

  • Tomato salad - vine tomato, olive oil, balsamic vinegar & salt


Method

For 2 people, use 1 flatbread each, half a block of halloumi & 1/3 of a chorizo sausage.

1. Cut the halloumi into slices. Heat up a pan with a drizzle of olive oil and add your halloumi slices. Cook until browned, turning them over when they have some colour.

2. Dice the chorizo into little squares. I slice it and then cut each slice into 4 pieces. Heat a small frying pan and add these to the heat or fry them in the same pan as the halloumi. The chorizo will start to crisp up as it fries in its own oil. Once browned, remove from the heat.

3. Toast the flatbread and place on a plate. Add the halloumi slices and chorizo and drizzle with honey. To finish, top with fresh herbs and it's ready to eat!

4. Serve with a tomato salad. Dice the fresh vine tomato and drizzle with olive oil, balsamic vinegar and salt.


Et voila! This is a quick and easy dish you can even make for friends when they come for dinner served with a full bodied Italian red wine.
