Chocolate Chip Cookies

Ingredients

Makes 8-12 cookies

70 g Granulated or Caster Sugar

110 g Brown Sugar

1/2 teaspoon Salt

115g Butter

1 Egg

1 teaspoon Vanilla Extract

155g Plain Flour

1/2 teaspoon Bicarb of soda

150g Dark/Milk Chocolate Chunks

Method

  • Whisk together the sugar, salt & butter until the mixture is smooth and fully combined.

  • To the mixture, add the egg & vanilla extract and beat until soft ribbons coat the whisk and take a moment to fall off.

  • Sift the flour and baking soda and fold it into the mixture making sure not to overmix.

  • Add the chocolate chunks, mix and place the cookie dough in the fridge for a minimum of 30 minutes. If you have time, you can chill it overnight.

  • When you are ready to bake them, prepare a baking tray or two and line it with baking paper.

  • Preheat the oven to 180F.

  • Using an ice cream scoop, scoop the dough and place each ball onto the baking paper leaving a good gap between each cookie as they will spread when cooking. Don't need to flatten the cookies before baking, they will do this in the oven.

  • Bake them for 10-15 minutes keeping an eye on them. Remove them from the oven when the edges of the cookies begin to go brown.

  • Allow the cookies to cool and then they're ready to eat!
